I saw my friend Chanelle post sweet potato hash on her Insta-stories as I was literally on my way to the grocery store so I decided to make my own recipe! I mentioned before that I basically grew up vegetarian and I noticed as an adult since consuming way more meat then I did as a child, I often feel tired, sick and bloated. So I’m trying to mimic my childhood diet by limiting my meat intake and cooking more vegetarian meals.

The recipe is super duper easy and I can’t believe how delicious it came out. I’m usually ok with eating healthy but sometimes you just suck it up cause it’s good for you and you don’t really enjoy it. This was seriously BOMB, I literally licked my plate when I was done. I loved it so much I wanted to share the recipe. If your looking for an easy, quick, healthy and DELICIOUS recipe this one is for you!

Directions (1 serving):

  1. Peel and chop 1 large sweet potato, add to a medium hot skillet with olive oil and water. Add salt and pepper and cover the pan to let the potatoes soften.
  2. Chop 1/2 of a small red onion and dice 1/2 half of a small white onion. Minch 3 garlic cloves.
  3. When the potatoes have softened about halfway add the onions and let them simmer (feel free to add oil or water as you go so it doesn’t dry out)
  4. Once the onions have softened a bit, add the garlic.
  5. When the potatoes are pretty much finished add 1-2 cups of fresh Kale. Add salt pepper and turmeric to taste. (Tumeric is SOO good for you, I try to add it in my food as much as possible, read it’s benefits here )
  6. Cover and let it simmer.
  7. Enjoy!

Dancing All Night with Aerosoles #OnHerFeet Challenge

Aerosoles challenged me to dance all night in my shoes and guess what?! I took them up on it! The older I get, the lower my tolerance for heels gets. I do so much in a day the last thing I want to worry about is my feet hurting. So I was a little hesitant to wear heels all night to dance which is something I haven’t done since college! After a full night of bopping around West Hollywood with my girlies dancing and having so much fun, I realized I hadn’t thought about my feet once! I mean how many times have you gone out in heels dancing and didn’t even think twice about your feet? It was pretty amazing. My feet felt great at the end of the night and I didn’t even have to change into my flip flops that I keep in the car when I’ve had a long night! MAZDA CX-3 Grand Touring

DSC05161 DSC05168I recently went on a trip to Palm Springs and had the pleasure of driving the 2017 Mazda CX-3 Grand Touring SUV. I actually don’t know much about Mazda cars but I was honestly pleasantly surprised. I drive a luxury car and had myself wondering why after this trip lol. This car had everything my car had and more!

I loved the sleekness of the design and interior and the ride was so smooth. It had a cool little display on top of the dashboard that allowed me to see the mph and other information without looking down from the road. I loved that it has bluetooth so I could set my phone up to it and also listen to music from my phone. And the sound system is Bose so it was pretty amazing!

Overall it was the perfect car for the trip. More than enough room, easy to drive, and got us to and from Palm Springs in comfort!


24 Hours In Las Vegas

I realized I’ve been to Vegas more for work then for play. Which I’m ok with ’cause partying in Vegas is not really my thing. I have one solid day in me, then I’m on my old lady vibes. This time I went to Vegas to help my friend David who is a balloon artist. David and I went to grad school together and looking back I don’t think we thought either of us would be doing what we’re doing but here we are lol. I love helping him with his projects and he ended up getting an awesome gig in Vegas building a booth for the Surkus app at the Nightclub and Bar Tradeshow.

We only had a little bit of time to explore but we made the best of it. Before we went to build the installation, we woke up early to try a popular spot called SkinnyFats located off the strip. I’m not sure how David learned of it but I’m so happy he did. The menu is comprised of two sides: basically the “skinny” side and the “fat” side. One side is more health conscious and the other is more delicious conscious. Both sides look delicious though. I chose the healthy side and got tofu scrambled eggs (blame it on my vegan sister and vegetarian parents). It was really good and I also got a fresh juice, “liquid defense” which has orange, carrot, apple, lemon, lime and basil and I felt like it gave me energy for the day.

After breakfast, we spent most of the day building the balloon installation. I mean I have no idea what I’m doing with balloons but I just follow David and pretend I’m an expert. I think I’m a good helper cause this is the 2nd one I’ve helped with and we have a third one coming up in Chicago really soon! (pats self on the back)

When we were done building the installation (success) we decided to head to dinner before our flight home. We literally spent 24 hours in Vegas. We picked the worst time to go to dinner (5pm during a tradeshow) so everywhere was packed. The Venetian is my favorite place to eat in Vegas, there are so many restaurants in one strip many owned by famous chefs.

We opted for a spot called Public house and I got the tuna tar tar, endive salad, and brussel sprouts ( I know I know so healthy! lol). A lot of times I like to eat healthy when traveling because all the running around and pressure from the plane messes with my stomach so I like to keep it light a breezy. The food was delicious and before we knew it, it was time to board our flight!

Quickest Vegas Trip ever. Next stop, Chicago!
